Anyone else guilty of loving a lazy dinner during the week? After a long day at the office, the last thing I want to do is cook up a gourmet meal and end up with a bunch of pots and pans to clean up – know what I mean?
Some may say a good ol’ toastie is more of a ‘lunch’ than a dinner – and this is true to a certain extent. But sandwiches/toasties and a cup of tea can totally be a dinner too, especially if you’re eating alone with nothing but Netflix for company. It’s quick, it’s super tasty, and if I can make it, anyone can!
My go-to toastie Is not only delicious but easy most importantly cheap! Ain’t nobody got time for pricey meals am I right?
- Cos lettuce
- Halloumi cheese
- Crunchy loaf of bread, my go to is a Vienna
- Sliced chicken
- Salt & pepper

It’s pretty self explanatory on how to put a sandwich together! My partner and I love to sit around the kitchen bench chopping up our veg and toasting our bread. I must say Mems sandwich building skills are so impressive. Mine always look like crap compared to his Insta-worthy toasties!
